Keto Cookie Dough Truffles
A delicious and EASY to make cookie dough bite, made sugar free with ZenSweet monk fruit sweetener. This easy recipe is perfect for meal prep to create treats perfect for a quick snack or dessert.
Servings: 20 bites
- 1/4 cup butter softened (or use a vegan butter spread)
- 1/4 cup almond butter sub cashew or sunflower butter
- 1 ZenSweet Chocolate Chip Cookie Mix
- dark chocolate optional, 85% or sugar free recommended
First, cream the almond butter and softened butter together in a bowl. Next, add the ZenSweet Chocolate Chip Cookie mix, and stir to form a dry looking cookie dough.
Use a cookie scoop or a measuring spoon to scoop the cookie dough into balls. Place them on a baking tray or plate, and freeze them for about 30 minutes. You can skip freezing them, but they are more firm and easier to coat in chocolate if you do.
Melt dark chocolate or keto sugar-free chocolate in the microwave or using a double boiler.
Dip each cookie dough ball in the chocolate. This is optional! They are delicious on their own without the chocolate coating, but we never say no to extra chocolate in this house!
