Keto Apricot Bars
Happy first day of Spring! We can all use some good vibes right now. Fruit is not traditionally keto let alone jelly or jam. But this recipe uses ZenSweet to make a low sugar jam. The fresh apricots make you feel spring sunshine in every bite. Our Vanilla Bean cake mix makes it so easy!
Servings: 16 Bars
Ingredients
For the Crust
- 1 bag ZenSweet Vanilla Bean Cake mix
- 3 tbsp coconut oil or butter
- 1 tbsp vanilla extract
- 1 tbsp water
For the Filling (you will need half for this recipe and can save the rest)
- 2 lbs fresh apricots wash, half and pit
- 1 cup ZenSweet monk fruit sweetener
- 1/2 cup lemon juice
- 1/2 cup water
For the Crumb Topping
- 3/4 cup chopped walnuts
- 1/3 cup unsweetened shredded coconut
- 1 tsp cinnamon
- 2 tbsp ZenSweet monk fruit sweetener
- 1/2 tbsp coconut oil or butter
- 1/4 tsp salt
Instructions
For the Filling
- Wash, half and pit the apricots. Place in a pot with a wide bottom. Add water, simmer 10 minutes, stirring almost constantly.
- After 10 minutes the apricots will turn into a mash
- Add ZenSweet & lemon juice. Stir & simmer on low heat for 40 minutes or until it thickens and the apricots are completely mushy
- To see if the jam has thickened, pour some onto a small plate that has been previously in the freezer. Let it sit a minute, then make a line through the jam with your finger. If the jam stays to the sides its thick enough. If not, cook a little longer
- Use 1 cup of the mixture for your recipe and save the other cup in the fridge and eat within a week
For the Crust
- Preheat your oven to 350 degrees Fahrenheit
- Line an 8x8 square pan with parchment paper and lightly grease
- Combine all of the crust ingredients until mixture is crumbly
- Distribute crust over the parchment paper, pressing down firmly and evenly
- Bake the crust for 10-12 minutes, until lightly golden brown
- Remove from the oven and let cool for 20 minutes. Leave the oven hot
- While the crust is cooling, make the crumb mixture
For the Crumb Topping
- Combine all ingredients in a small mixing bowl
- Once the crust is cooled, spread the apricot filling over the crust
- Complete by topping with the crumb mixture
- Now bake for 15-18 minutes, or until the top is golden brown
- Remove from the oven and cool completely. Once cooled, slice into squares
